Albumen is obtained by lixiviating ground soja beans with water, separating the fat and albumen from the liquid by means of acids or salts (or by spontaneous coagulation by ferments), and after drying the precipitate, finally extracting the fat with a suitable medium. Lactic, sulphuric, hydrochloric, and acetic acids, and salts such as magnesium chloride and sulphate are suitable for separating the solid portions from the lixiviation liquid.
