A process of obtaining coco-nut oil from coco-nut meat or copra consists in comminuting the material, soaking and agitating the comminuted mass in hot salt-water until the oil is released from the non-oily material, allowing sedimentation, passing the oil with at least part of the other material through a separator, and subsequently clarifying the oil. The salt solution contains not less than 3 per cent. of salt and may contain 5 or 6 per cent., and is used at 95 to 100 DEG C. A higher temperature and super-atmospheric pressure may be used.
