[Class 23] [See also Group VI] In processes for producing alcohol from sugar containing liquids produced by extraction from sugar beets or other sugar containing vegetables, the yeast after fermentation in vats is extracted by means of centrifuges having a conveying device or pile of discs arranged within the bowl and a sludge space outside the conveying device or pile of discs, the separated yeast being discharged to a point 1 immediately outside the conveying device or pile of discs, or, when the outer periphery of the conveying device or pile of discs is at a smaller distance from the centre than seventenths of the inner radius of the bowl, to a point at least seven-tenths of this radius from the centre. In the type of centrifuge employed, the inlet opening or openings 4 of the discharge channels 5 is or are arranged at a level corresponding to substantially half of the height of the pile of discs 2, the inlet openings of the discharge being located at the greatest diameter of the sludge space. The shape of the bowl walls is preferably such that they slope towards the outlet openings 4 in order that the outseparated matter may slide easily along the bowl wall towards these openings.
