In the manufacture of starch from materials such as maize by steeping and wet milling followed by tabling of the mill starch, the gluten tailings are centrifuged to produce a gluten overflow and a recovered starch underflow, and the starch underflow is introduced into the mill starch stream for retabling. The gluten tailings may be concentrated, e.g. by settling, before centrifuging, and a wash water, e.g. the overflow from the settling, may be supplied to the centrifuge. The liquors fed to the centrifuge may be warmed. Part of the gluten tailings or of the centrifuged starch may be diverted to prevent fouling.
