For the colouring, enhancement of food value and improvement of the keeping properties of fats there are employed fat-soluble products obtained by finely disintegrating fresh carrots, directly emulsifying the disintegrated carrot by agitation in oil or fat, and treating the emulsion to isolate the oil or fat phase from the aqueous phase and from the structural substance of the carrot. According to an example, there is incorporated in freshly-made butter 1 per cent of a product made by pulping 10 kg. of carrots in a hammer or cross-beater mill, heating the pulp to 50 DEG C. and emulsifying it by means of a high speed agitator with 1.5 kg. of butter fat, filtering the emulsion through a cloth in a hydraulic press, completely separating the oil phase by centrifuging, and removing ethereal oil from the oil phase by steam or with the aid of carbon dioxide or nitrogen, under reduced pressure if desired.ALSO:From carrots are obtained fat-soluble products containing in particular the provitamin A and vitamin E constituents of the carrot, which products are to be employed for the colouring, enhancement of physiological value and improvement of the keeping properties of fats and oils, fat-containing foods such as milk, and ointments and the like containing fat and water, by finely disintegrating fresh carrots, directly emulsifying the disintegrated carrot by agitation in oil or fat, and treating this emulsion to isolate the oil or fat phase from the aqueous phase and from the structural substance of the carrot. The disintegration, emulsification or phase separation may be effected by subjection to supersonic vibration. According to one example, 10 kg. of carrots are pulped in a hammer or cross-beater mill, the pulp is heated to 50 DEG C and emulsified in a high-speed agitator with 1.5 kg. of butter fat, the emulsion is filtered through a cloth in a hydraulic press, the oil phase is completely separated by centrifuging, and ethereal oil is removed from the oil phase by steam or with the aid of nitrogen or carbon dioxide, under reduced pressure if desired: the product may be incorporated, in the proportion of 1 per cent, in freshly-made butter, or may be employed in cosmetics. According to another example, pieces of carrot are passed through a mincing machine and the minced carrots are treated in a continuous flow process with olive oil: the product may be incorporated, in proportions up to 10 per cent, in an ointment.
