The crystallization of insulin from aqueous insulin solutions containing one or more of the metals zinc, cobalt, cadmium, nickel, divalent copper, divalent manganese and divalent iron by changing the pH value of the insulin solution, is characterised in that the crystallization takes place in the presence of one or more phenols or alkyl substituted phenols. The phenols may be polynuclear hydroxy compounds. Specified are phenol, naphthols, cresols and mixtures thereof. Preferably, the phenol is used in an amount of at least 2 per cent of the insulin.
