Starch or other dextrose and maltose convertible polysaccharides are converted into dextrose and maltose containing products by subjecting starch milk, or other polysaccharide in an aqueous medium, to a mild acid treatment under a superatmospheric pressure sufficient to prevent substantial loss of water by evaporation while heating to a temperature above 100‹ C., neutralizing and cooling the intermediate product to a pH- value and temperature suitable for enzymic liquefaction and subjecting the intermediate product to enzymic liquefaction and subsequently to enzymic saccharification. " Mild acid treatment " is defined as hydrolysis of the starch or other polysaccharide such that the DE value does not exceed 10, e.g., by using a strong acid for a short period or a weaker acid for a longer period; preferred conditions are a pH of 1À8-2À5 for about 5 mins. at about 140‹ C. in a preferred process, the intermediate product is neutralized, e.g. with Na 2 CO 3 , and subjected to a further heat treatment above 100‹ C. before rapidly cooling to the enzymic liquefaction temperature, e.g. 88‹ C. Alfa-amylase may be used as the liquefaction enzyme. Saccharification is preferably effected at about 60‹ C. using amyloglucosidase. The process is illustrated by reference to a flow diagram (not shown).
