1393037 Sugar and fat-containing products MOLKEREIGENOSSENSCHAFT DAHLENBURG E GmbH 19 June 1972 [17 July 1971] 28683/72 Heading A2B A mass containing sugar and fat is boiled to modify the sugar structure, dried to a residual moisture content to permit it to be processed to a powder, and ground, and the particulate mass so obtained is applied together with added ingredients selected from crushed or shredded almonds, nuts, or fruit, to a baking tin or an edible base, and is heated dry or baked without any further processing. The starting material may additionally contain glucose, honey, a binding or thickening agent for example flour and water, a milk product, and licithin paste. The mass may be applied to a meat, fish, cake, fruit or ice cream and baked or flamed to produce a lustrous coat. In the case of fruit or ice cream, albumen should be applied prior to the mass. Baking confections are also set forth.
