Sugared paste for spreading in the form of an emulsion of water and fat, comprises (based on the wt. of the emulsion) =5% fat, 10-40% water, 10-60% sugar, and 3-20% skim-milk solids, the proportions of the components being such that the sugars, including those derived from the milk, are partially crystallised such that =90% of the sugar particles have a size of 0.5-50 mu. The paste may be used for spreading on bread, biscuits etc., and also as glazing, decorating or bulking materials.
