Dextrose anhydride is crystallised from a soln. contg. 80-90% of solids (93% of them being D-glucose) under isothermal conditions or at between 55 and 75 degrees C, with controlled crystal growth (to 0.3-1.0 mm) initiated by addn. of nucleating crystals and/or a part of the preceding crystal batch. The crystallisation rate is high due to the presence of a considerable crystal surface area right from the beginning of the crystallisation stage.
