Deep-frozen coagulated egg prods., for direct use, e.g. cut in slices, to replace hard-boiled eggs; as cubes, for soups; and for egg-croquette prepn., are prepd. by emptying the liq. egg portions, opt. admixed with other foods and/or with spices, in ready-for-sale packs, in which they are coagulated and frozen. Culinary behaviour of coagulate may be improved by admixing, before emptying and coagulating, with swelling agents of plant origin. Handling of coagulated compsn. and danger of forming a water-deficient, rough, "corky" gel on freezing, packing and storage are prevented.
