Isomerised hop extracts - prepn by contacting a soln of hop extracts contg alpha-acids beta-acids and hop oils with a base

The soln. of the hop extract, dissolved in an organic solvent, is contacted with sufficient of the base to form a salt of the alpha-acids, and is then heated sufficiently to obtain the salt corresp. to iso-alpha acids, and the iso-alpha acids are separated from the beta-acids and hop oils. The organic solvent is water-immiscible, e.g. toluene, benzene, etc., and the base is an oxide, hydroxide or carbonate of an alkaline earth metal. Process is rapid, risks of degradation, e.g. saponification of fatty esters, being reduced.
