Preservation of the sugar content of sugar beat stacked in a storage place, by subjecting the beets after washing and the separation of soil, stones and leaves, but prior to conveying them to the stacking position, to the action of dilute milk of lime. During storage the CaO becomes CaCO3 forming a protectively layer which neutralises any org. acid formed by bacterial (decomposition) reactions.
