Meat is salted by impregnation with pressurized brine, in an appts. with multiple probes, fitted to a distribution plate which is depressed by a hand-lever acting against a counterweight, so that probes are introduced into meat, via a guide plate, which weighted and serves to hold meat in position. An automatic valve control system. actuated by the position of the hand-lever, provides that brine is injected only when the probes are fully home, and during withdrawal; thus ensuring controlled dosage. The appts provides even treatment of various sized meat portions.
