A process foT the manufacture of compressed baker"s yeast from Indian plantation cane waste molasses using a molasses clarifying method which comprises adding calcium triple superphosphate and acid sulphuric (cone.) in the pro portion of f and 0.08 percent respectively to a hot molasses solution of 50% sugar content (on weight of molasses) heat ing the solution with steam and agitation of the solution and maintaining it at boiling temperature for 30-40 minutes, cool ing the contents, decanting, diluting with water to 2.5 degree brix strength propagating the yeast culture and fermenting after adjusting the total sugars to 1 to 1-25 percent, formal number 1 to 1,3, total sugars to wet yeast (75 percent) ratio of 4:3, phosphate 125 to 150 mg/L, pH 4.8 to 5.2 and aera tion rate of 0.5 cu ft. per gal of wort and at a controlled temperature of 30"C,
