Proteins, esp. albumins and globulins for human nutrition, are recovered from rape-, sunflower- and legume-seeds by (a) setting supernatant soln. obtd. after isoelectric pptn. of globulins to pH =7, (b) separating the materials precipitating under mild conditions, e.g. pH 7-8, 25 degrees C. which contain no protein-N, e.g. mucins, phytins and polysaccharides, and (c) precipitating and recovering the albumins by heating to 80-100 degrees C. at pH =7 (9-10). Combined globulin and albumin recovery pref. takes place by setting soln. contng. them to pH =7, separating precipitating materials and recovering the proteins at pH 7 (9-10) by heating to 80-100 degrees C. Supernatant soln. remaining after albumin and globulin separation can be re-used for seed material extn. after setting to suitable salt content and pH. The liquid contng. protein pptd. in alkaline medium is set to pH 9 before separation.
