Carthamin (I) is prepd. by treating (I) precursor from safflower with oxidising enzyme and drying in hot air. In an example, safflower petals were crushed, mixed with glucose oxidase, and dried in hot air to give pure (I) in 0.58% (based on dried petals) yield, compared with 0.2-0.3% for conventional methods.
