The vegetable or fruit sorting machine comprises two guide rail systems supporting pairs of rollers over which the vegetables are moved. The rollers are connected by end links which swivel in conjunction with the lower guide rail system as they pass over the grading or sorting area and the lower guide rail is stepped downwardly in the conveyor direction which thus increases stepwise the swivel angle of the end links. This means that the sorting or grading gap between the rollers is increased in clear steps. The length of the stepped sections preferably corresponds to several successive end links so that the items to be graded, which are normally or irregular shape, remain for a longer time in each grade which allows them to move into a position in which they can fall through to the collecting trough.
