Smoked spices and fillings for flavouring pickles, etc., are produced by bringing the raw material, - spices, powdered meats, etc., into intimate contact with smoke, in a vessel in which they are thoroughly agitated. The vessel may be either a rotating drum, or a stationary cylinder in which a rotary agitator sets the particles of raw material whirling around in the smoke, which is created by the action of steam superheated to 350 degrees C on sawdust, and is passed through a fabric filter to remove floating matter, before it enters the treatment vessel. The spices are smoked uniformly throughout, and retain their free-flowing characteristics.
