A process and an appts. are claimed for carrying out enzymic reactions in liquid medium with the enzyme fixed on a solid support. The process is effected in two stages in the first of which a relatively low temp. is used and the reaction is not complete for as long as the liquid is in contact with the supported enzyme. The process is partic. claimed for proteolysis reactions esp. of milk casein, the first proteolysis stage being effected at 0-28 degrees C, pref. 5-20 degrees C and the second coagulation stage at 30-60 degrees C, pref. 35-45 degrees C, resulting in coagulation of a larger amt. of milk per vot. unit of rennet than was possible with teh enzyme directly dissolved in the milk. The process is also applicable to prodn. of a new cheese free of rennet. Clogging and fouling of equipment and loss of materials are also eliminated.
