Method comprises seeding a fermentation media contg. a fermentable vegetable material (esp. beetroot pulp) with a microorganism capable of producing the mixt. The concn. of the vegetable material is adjusted to a value at which the microorganism is capable of producing the mixt. and the fermentation conditions are regulated to obtain the mixt. A mixt. of cellulase, hemicellulase and pectinase is obtd. The microorganism Aspergillus Niger ATCC 20452 is novel. Cellulase degrades cellulase to cellobiose, hemicellulase depolymerises glucides such as galactomannane and pectinase transformers pectin into galacturonic acids. It is advantageous to use a mixt. of these to treat vegetables, vegetables products or vegetable residues to improve the digestibility of the products for humans esp. babies, and animals. The above process achieves this mixt. in a single fermentation avoiding separate prepn. and purification of the individual enzymes.
