Pastry prod. consists of short pastry and raised pastry (with yeast) which are made separately, each spread out in the form of a rectangle, and superimposed with the short pastry underneath. The pastry layers are then rolled out together, folded in three after being sprinkled with sugar, and worked in turns as for puff pastry with sprinkling of sugar between each turn. The pastry is then formed into balls which are shaped and decorated as desired, and left to rise before baking.
