Hydraulic press for stripping meat from bones - has cylinder with removable end cover and perforated liners

The flesh is stripped from the bones of meat by applying such a load to the material in a pressure chamber, that the meat leaves the bones. The pressure is raised in a single phase to =200 atmos. for cooked starting material and =300 atm. for raw starting material. These pressures may be raised to 300 and 350 atmos. respectively. The plant for carrying out the process includes a cylindrical pressing chamber with outlet holes for the meat, a plunger piston to apply the load to the contents of the chamber and a closed wall at the end of the pressing chamber facing the piston. The pressure chamber consists of an exchangeable cylindrical liner sleeve in a bore in the pressure chamber and the outlet holes opening into the collector channels are in the liner sleeve. The holes in the liner differ from those in other liners, the holes for cooked material being 3 mm in diameter whilst those for raw material being =2 mm in dia. The interal dia. of the sleeve is 200-300 mm. The piston has an exchangeable cladding of synthetic material. Device prepares meat for sausage prodn. and ensures a constant content of albumen and calcium.
