Dried fruit, esp. apple slices or chips, are prepd. by (i) washing, removing pips and cores, and slicing (ii) dipping in an aq. edible soln. to prevent browning; (iii) freeze-drying in standard plant, pref. after blanching; and (iv) packing under a protective atmos. to prevent air- and water-vapour access. The prods. are ready for immediate consumption, as crisp, mouth-melting foods, and are pref. derived from apples, as well as fruit and vegetables having a similar consistency as apples, e.g. pears, celery and carrots.
