The invention relates to a method for producing the flesh of small crustaceans. /P P The method according to the invention for the production of marine crustacean meat, in the form of muscles, consists in subjecting the crustaceans, fresh or thawed to a heat treatment ensuring the coagulation of the proteins after which they are rinsed in the purpose to cool it. They then undergo a positive acceleration carried out for a short period of time in order to destroy their chitinous shell; after which, launched at a considerable speed, they undergo a deceleration, which causes the separation of the cephalothorax from the abdomen with simultaneous denudation of the muscle. /P P The muscles are separated from the other inedible parts of the body of the crustacean by flotation and then recovered. /P P The invention applies in particular to the treatment of small crustaceans known to specialists under the name of Antarctic "krill" (or "crille").
