A wood-burning oven for baking pies, tarts, pizzas, etc. for restaurants or outdoor barbecues, is of the type in which combustion is supported by natural draught and the hearth is covered with a refractory dome, e.g. made of refractory concrete. A metal, exhaust-smoke bond is hung over the dome exhaust flue and the top of the hearth charging port. A sliding damper can be positioned for (a) lighting-up with draught up both exhaust flue and charging port fume passage; (b) normal fire, with damper closing the exhaust flue only and (c) slow fire, with damper closing fron fume passage only.
