A plant for the extraction of juice from products such as grapes or fruit includes a buffer tank which is connected to the juice outlet of the press cylinder. A pump removes the juice from the buffer tank to a storage tank until a set minimum level is reached. The pump is then shut off and the press piston is returned for the start of the next cycle which is combined with a topping-up of the press cylinder until the mash has reached a set pressure. This reduces the overall duration of the juice extraction operation without any reduction in the juice yield.
