Prepn. of concentrates of vegetable and animal prods., esp. tomatoes - by evapn. of the material, sepn. into solid and liq. fractions, conc. of the liq. fraction and remixing with the opt. dried solid fraction
The comminuted vegetable or animal material is first evaporated by heating. The prodn. is then sepd. into a low viscosity liq. fraction (I) contg. no undissolved cell components, and a solid material fraction (II). The fraction (I) is then evaporated to form a concentrate (III) and the solid material (II) is opt. dried. The concentrate (III) is then mixed with the opt. dried solid material to form the final concentrate. The evapn. stage before sepn. into liq. and solid fractions replaces the pasteurisation stage of prior art processes. This reduces energy consumption and plant investment costs. The process is esp. useful for making tomato concentrates.
