A flavouring for altering, reinforcing or supplementing the taste and/or aroma of foods or luxury goods is prepd. by adding to the usual components an enamine of formula (I): where R1 and R2 are H or (m)ethyl and =1 (pref. both) R group is CH3. A sweet, buttery flavour is conferred on the food, or is reinforced. The flavouring can be added to foods which are later to be heated.
