Spiced honey cake (Lebkuchen) and similar pastry is dried by using processed dry air of low humidity so that the drying process is improved even at low air flow rates; the dry air is also processed with a minimum of energy consumption. This has been achieved by admitting the low-humidity air for dehumidifying and the warm air for heating through separate ducts. Heat is extracted in a heat exchanger from the warm air. The liquid and the gaseous phase of the heat transfer medium in the heat exchanger are matched to the planned working temperature gauge of the warm air and of the low-humidity air.
