Decaffeination of raw coffee is carried out by disintegrating raw coffee with water vapour at elevated temp. in such a way that the coffee contains 15-55 wt.% of moisture; then extracting caffeine with a compressed gas and an extractant in the gas state; partly condensing the extractant with caffeine; and then evaporating the extracted from the condensate and recycling; the residue is pure caffeine. The mixt. of the compressed gas and the extractant, esp. in the hypercritical state, extracts caffeine from raw coffee selectively and very efficiently. The technology of their process is simpler than in the known processes.
