Yeast is grown on lactose-contg. residual from dairies, and milled cereal prods. leguminous fruit prods. and/or other sugar-and polysaccharide-contg. raw materials using ammonia as sole inorganic additive. Starch is first converted into dextrines and the lactose into lactic acid bh fermentation with lactic acid bacteria which are capable of fermenting lactose and other sugars or polysaccharides into acids, with the addn. of ammonia. The resulting lactic acid suspension is then used for growing yeast, during which extra ammonia is added. The dextrines are hydrolysed with amylases at the end of the first stage or during the second. Process can be operated semi-continuously and provides an economical means of producing yeast using various by-prods. contg. lactose and other sugars.
