Tubular wrapping for food prods. enabling a smoke flavour and colouration to be given to the food prod. therein, comprises a cellulosic material tubular element coated on one face with a mixt. of a liquid smoke product and pectin. The amt. of liq. smoke prod. is =1.6 mg/dm2 and the amt. of pectin is =1/550 of the smoke prod. A tubular wrapping is prepd. by a process of applying to the surface of the tubular wrapping, pref. cellulosic, a homogeneous mixture comprising =20% smoke prod. and =0.17% pectin based on the smoke prod. Used to impact a smoked flavour and appearance to a wide range of food prodts. The pectin improves the transfer of flavouring and the process avoids any need for an inefficient smoking treatment.
