The brine contains, per 100 l. 36 kg of salt and 0.40-0.6 kg of salt petre, oBe- being maintained at about 24. Pref. for preserving cleaned meat in vessels, the brine comprises, per 100 l. of boiling water, 36 kg salt, 0.6 kg salt petre and 1 kg of sugar. Pref. for packed meats, the brine comprises, per 100 l. of boiling water, 36 kg salt, 0.4 kg salt petre and a colourant. The process, esp. for pork and beek, enables good preservation in tropical countries.
