Coffee extracts contg. 15-30 wt.% of solids are concentrated to a 30-60wt.% solids content suitable for freeze drying, by partial freezing and removal of ice crystals. This process is improved by separating the ice crystals in a filter press cooled to -3 degrees to 0 degree C to prevent melting of the ice crystals.
