Knife for use in bakery - having plastic handle and commercially available blade

A sleeve of plastic material formed by two cheeks which can be joined by male and female parts, takes an industrial type blade. The two cheeks are assembled by blind holes in which pegs fit, and two pegs hold the blade so that it cannot tilt. A protective sheath is provided and the knife fills a need of working bakers who otherwise have to make a knife themselves from a piece of sawblade, etc., for cutting the sinuous lines along bars of fough to permit the escape of gases before baking.
