The device has a knife blade housed in a plastic handle and carved with teeth in the shape of a toothed rack to receive the effect of a driving rod (I) and an anti-return ratchet rod (J). The driving rod is actuated by fixed and movable axles of a mobile branch (C). The fixed axle crosses the thickness of the handle, and the movable axle is engaged in the mobile branch. The ratchet rod is articulated on the fixed axle. The rods are activated by the effect of pin type springs placed around the axles. The advancement effect of the blade is cancelled in large opening of the branch of the device.
