PURPOSE:To prevent the change in color from brown to black violet in internal organs of pigs, occurring in deodorization and heat-treatment, by adding sodium peroxyphosphate in treating internal organs of pigs with hot water or in canning them. CONSTITUTION:In treating internal organs of pigs, e.g., stomach, intestines, etc. in hot water, 0.1-0.2wt% sodium peroxyphosphate selected from sodium primary peroxyphosphate and sodium secondary peroxyphosphate is added, or the internal organs are treated in hot water, and, if necessary, they are cut into proper size and fed into cans, to which sodium peroxyphosphate-containing seasoning is added, and they are canned conventionally.
