PURPOSE:To prepare beautiful soboro, by grinding tofu from which water is removed completely a mincer, blending the ground tofur with seasoning, heating the blend with stirring. CONSTITUTION:Water is removed completely from two cakes of commercial tofu to give fairly hard bulk, which is ground by mincer one time. The ground matter is blended with 5ml edible oil, 100g sugar, 6g salt, 10ml sake (liquor), 5ml mirin (a sweet sake used as seasoning), 7g chemical seasoning, and a small amount of food red, and the blend is heated with stirring for about 15min.
