COLD STORAGE OF SEA CUCUMBER

摘要

PURPOSE:Internal organs, unpleasant colors, slimes and so on are removed from sea cucumbers with no use of chemicals and the sea cucumbers are boiled softenly with a good appearance, thus producing cold-stored sea cucumbers that are eatable directly or ater a little cooking. CONSTITUTION:Internal organs mainly containing intestines are removed from raw sea cucumbers, which are rinsed with sea water and placed in hot water of 95- 100 deg.C. They are made to rotate by stirring, brushed and washed whereby they are boiled and simultaneosuly the slimes and dirty substance are removed from the surface with the original shape kept. The product is immersed in warm water of about 50 deg.C and exposed until decolorized and simultaneously the contraction of muscles caused by boiling is relaxed. Then, the abdomen is opened by cutting and the sea cucumbers are made to rotate in cold water and brushed to remove unnecessary parts such as fibers or tube feet. The product is boiled at 105-110 deg.C under pressure, cooled and frozen to about -30 deg.C.
