A PROCESS FOR THE PRODUCTION OF FROZEN MANGO PULP FROM DASHEHRI AND CHAUSA VARIETIES.

We Claim:- 1. A process for the production of frozen mango pulp from Dashehri and Chausa varieties which consists of pulping the mangoes of said varieties and separating the skin and the stone of fruit from pulp ; adding 0.2 per cent citric acid or tartaric acid of th* weight of the pulp dissolved in minimum quanilty of water to the pulp and mixing thoroughly ; packing the pulp in polythene bags and putting it in wax coated thick paper cartons; quick freezing of the packed pulp at -40C and storing at -19" to -26C.
