The deep-frying unit comprises an open tank (12) which contains the oil or fat (28) and a heating element (21) to bring the oil to the required temperature. A cooling element (17) is arranged at a level below the heating element (in water (27) on which the oil layer in the tank floats). Small pieces, which detach themselves from the articles being fried, collect in the cooled water layer and can be removed therefrom without being burnt in the hot oil. The cooling element preferably has openings which allow the said pieces to sink down. The bottom of the tank may be provided with one or more funnel-shaped closable (14) outlets (13). Water spray nozzles (24) may be arranged above the oil. Deep drying whilst preventing oil deterioration due to burning of small pieces detaching from articles being fried. The arrangement eliminates the need for expensive oil filtration equipment or frequent oil changes and simplifies the oil cleaning procedure.
