Process for the aeration and evacuation of fermentation gases and for the elimination of calories in micro-organism cultures in a solid medium, and devices for putting it into practice
The process consists in creating, within the culture medium, at least one pressure variation cycle to permit, during the pressurisation stage, the entry of the reactive agent at all points of the medium and, during the depressurisation stage, the removal of the fermentation gases and the removal of a part of the heat released by the exothermic reaction of the microbial metabolism by virtue of steam extraction. The invention also relates to devices enabling such a process to be implemented. IMAGE
