Prodn. of pure, soluble whey proteins (I) comprises adding at least one polar, organic solvent, esp. acetone, to a whey-protein concentrate obtd. by ultrafiltration, then sepg., neutralising and drying. Suitable starting materials are sweet or acid whey, or conc. whey. Acetone pptn. is pref. at 0-30 (18-22) deg.C and pH 4.3-4.7 (4.5), using 25-50 (35) vol.% acetone (based on the vol. of the aq. phase). The centrifuged protein ppte. is neutralised and dissolved up at pH 7.2-7.5, then opt. the pH is lowered to 6.4-6.5. (I) are recovered in pure, undenatured form practically free of lactose and salts, and acetone is easily and quantitatively removed (I) are useful for incorporation into foods, e.g. processed cheese, pastes, bakery goods and ice cream.
