PURPOSE:''Chinmi'', a kind of hors d'euvre served for drinking Japanese sake, usually made from dried fish, which is prepared by dipping internal organs of domestic animals in the solution made by mixing flavors and spices and smoking them, thus having a good taste similar to ''surume'', dried cuttlefish. CONSTITUTION:To 100pts.wt. of water, are added 10pts. of salt, 2pts. of sugar, 1pt. of ''mirin'', sweetned sake, 0.3pt. of sake, 1pt. of sodium glutamate, 0.1pt. of red pepper, 0.1pt. of garlic and 0.1pt. of onion and they are stirred to prepare the seasoning solution. Pretreated organs of domestic animal such as stomach of cow or pig are dipped in the solution for 2 or 3 days and smoked in the chamber for 3- 6hr.
