A process and a mould assembly for making waffles etc. The mould is of the type which demoulds the prod. by splitting centrally into two half-moulds. The two half-moulds are brought together with their contact faces in a vertical plane. Semi-liq. waffle paste is introduced into the mould cavity via an inlet between the contact faces. The vertical mould is heated to cook the prod. and the mould-halves are subsequently parted to demould the solidified cooked prod. The mould inlet is pref. at the top of the mould assembly and paste is fed in by gravity. As the paste is introduced, clearance between contact faces should be less than 1.5mm. The paste is pref. poured while its viscosity is between 25 seconds and 2 minutes CF4. Cooking temp. is pref. between 140 and 180 deg.C. Mould-halves can be hinged or slidable, or both, for relative movement which parts and brings them together. The width of the interface contact surface is pref. not less than 5 mm, more partic. between 8 and 25 mm. Used for moulding and baking waffles, fritters, wafer biscuits, pancakes etc.
