Creamed green peppers and a method of mfg. this prod. Fresh green peppers are trimmed, thoroughly washed, sterilised and then ground. Pref. the sterilisation is effected by thoroughly agitating the washed peppers for ten minutes in water dosed with one part in twelve of lemon juice and 1.5 per cent salt. One part of sterilised peppers is mixed with one part of dosed, sterilising water and the mixt. is ground to form a cream of green peppers. The prod. has excellent keeping properties. It can be served with hot or cold meat dishes and mixes with mustard, fresh cream, ketchup, mayonnaise etc..
