An industrial process and installation for recuperation of heat energy supplied to a beer wort boiler in a brewery. The process is of the type which uses at least part of the steam exhausted by the wort boiling activity. The exhaust steam is withdrawn from the boiler and is compressed by a static thermocompressor, pref. a venturi type ejector mixer, powered by high pressure steam from a steam-raising boiler. Steam is delivered by the compressor to a heat exchanger where wort is heated by condensing the steam. Pref. ttwo or more thermocompressors are employed in series. The object of the invention is to reduce the heat energy required in brewery beer wort boilers. Heat consumption of the wort boiling process can be reduced by between 20 and 60 per cent.
