PURPOSE:To peel a potato in high yield and reduce the change in color, by dipping the potato in a solution of calcium chloride kept at a high temperature in a short time, and rubbing and removing the softened skin therefrom. CONSTITUTION:A washed potato is dipped in a heated solution of calcium chloride in a short time. The dipping time is about 2-6min at 110-150 deg.C. The heat- treated potato is directly cooled in flowing water. The enlargement of the heat ring is inhibited, and the calcium chloride on the surface is simultaneously removed. The resultant cooled potato has partial wrinkles in the epidermal tissues, which are separated from the flesh part. The skin is then rubbed and removed from the potato by the manual operation or a rubber peeler.
