A fried potato snack was prepd. Thus, washed potatoes sliced about 2˜4mm thick were parboiled for 5˜10 sec in a boiling gravy contg. 1% NaCl, for the purpose of ,maintaining the activity of carbohydrates, protein, mineral components, and preventing browning reaction. These potatoes were dried to 10˜15% water content by light or heat, and then fried for 8˜12 sec at 170˜190≰C. Sugar and salt give flavor to these fried potatoes.
